Soican day 23- dinner

This is very similar to a breakfast that I once had about 15 years ago at an orphanage in Galeana, Mexico where I was volunteering. I was so impressed that I wanted to recreate that meal. Mine was okay, but I was missing cabbage instead of rice. Their cooking was so pure and tasty. Everything was wonderfully prepared and fresh. Mine had the same feel but my canned beans, bagged corn tortillas and instant rice lacked the freshness. It's the best I could do with what I had after working all day. Maybe I will try to recreate it again with some better ingredients.
