Spectrum Day 42 - Breakfast
I have been spending the last month or so trying to get back to eating vegetarian and more healthful options. After hurting my knee in the Dominican Republic, it was hard to get back on track with exercise and diet. Then, getting back to school was rough. It is always very stressful at the beginning of the year. Going in early, and staying in late, are the way I spend my days. I have almost eliminated all meat from my freezer. I think by the end of this week, it should all be gone. I am looking forward to beginning to eat clean again. Smoothies, salads, veggies and hummus, are sounding better and better all the time. I am beginning to select foods that are on the healthy side of the spectrum again! This past Tuesday, I went back to my exercise group and did an insanity workout. It felt pretty good, even though I had to be cautious of my knee. Now that school is back in session, and things are starting to level out again, I am starting to feel motivated. I am going to run into the Greenwise Publix to get my supplies right now.
Breakfast this morning was great! It was a veggie skillet with cheese and an English muffin. I went to the diner near my house. They are so accommodating! It was great.
