Italian Night

Tofurkey Italian Sausage, marinara sauce over angel hair pasta and eggplant parmigiana. Now, as far as the sausage goes, I have definitely had better. I will say, Tofurkey gives a very good texture and taste. It has a good chew factor. It is pleasant enough that I will buy it again. If given the opportunity to choose between Tofurkey and another brand, I have had some that are amazing. I would not qualify this sausage as amazing. It is missing some of the spices that I like to have in normal Italian sausage. Spices like fennel (and who knows what else is in sausage?), but they're missing here. Also, I should've prepared them differently, but this was in addition to an already cooked meal. This was leftovers. I think I'm going to try to have some more tonight. Let's see how it goes.
