Vegan Summer- Breakfast on Vaca

Vacation can mean unhealthy, diet-compromising options, but it doesn't have to. Whole Vegan and vegetarian foods come in their own little, natural packaging that make it easy for transport. Avocados, bananas, oranges, apples, mangoes all are wonderful for making great choices easy. A little pre-planning and a stop at the local grocery store at your vacation destination can provide healthy, vegan options that can normally allude vacationers. If your hotel has a little fridge, then the possibilities are endless. Dairy-free yogurts, nut milks, and hummus are just a few items that can keep you on track when you are on holiday.

For me, this has always been a difficult concept. I have spent most of my vacationing life looking for the next McDonald's or fast food place. But as my diet and priorities are changing, so is my taste. I love the bright flavors of grape tomatoes, grapes, and cherries- the earthy taste of kale, spinach and avocados. I am excited about the changes I am experiencing within my own tastes and thoughts about food and life. It's definitely a journey, and I'm loving it.

Today's breakfast: Haas avocado toast, Silk yogurt, and oatmeal.
