Summer of Renewal: Meal prep

Planning ahead for meals can be a chore unless I stop and take the time to see what I have available and see how I can preserve it make future meal decisions less cumbersome. Recently, I went to my favorite taco place and bought a their veganized veggie burrito. It was chock-full of rice, beans, grilled veggies, pico de gallo, guac and thinly sliced cabbage. Yum. This burrito was massive in size. I only ate about a third of it and brought the rest home for later. On the counter, I had a spaghetti squash that was ready to prepare, so I cooked it up and scooped out the sweet stringy goodness from the gourd and put it in the fridge for an upcoming meal.

Today, I decided to make a meal out of both the burrito and the spaghetti squash. I cut a slice of the burrito and scooped out some of the spaghetti squash, added half a fresh Haas avocado and a spritz of lime and made a new meal. Sweet, seedless clementines finish out the meal.


I cut the rest of the burrito into two pieces and divided the spaghetti squash into small containers and tossed them into the freezer so I can enjoy these components in a future meal! Talk about tasty and convenient all rolled up into one!
A couple of days ago, I went to my local farmers market. I asked the attendant of the stall how much it would be for the bananas that were spotty and ripening. Eight for a dollar! Perfect. I selected eight and the lady told me to get some more. I got two more and put them in my bag. The lady said more and she put 5-6 more in my bag. All for a dollar! These bananas are perfect for smoothies. I laid them out on a tray and sent them to the freezer! Here, I have added some recently acquired bananas to the tray to prep them for my breakfasts for the week.

I went to Sprouts earlier in the week and found this huge container of strawberries for $2.99. I was pumped! These are ready for the freezer too! Once all the bananas and strawberries have frozen, the will be placed in their very own sealed containers so they will stay ready for smoothie making!
It does take some extra time to think ahead about prepping, but the end-product is worth the work! If you want any tried and true smoothie recipes, comment below and I will see about posting some of my faves!
