Day 35- Lunch Prep

School is back in session tomorrow and I am making my lunch! I am going to avoid eating lunch in the school cafeteria. While I am able to get salads and vegetables there, it is not the same as when I make my own lunch. I want to try to make my food as often as possible. Lowering sodium content is important to me as well. Eating at the school cafeteria, I cannot control that especially since most of their stuff is always frozen. Today, I am making a black-eyed pea stew with jalapeño peppers, stewed tomatoes and lots of other spices. I also have made a pot of pearled couscous to go along with my stew. Oh boy, I cannot wait.
