Day 243- 21 day FullyRaw challenge- day 3

Being in the mood for Mexican food, I decided to cook up some refried beans, rice and Quorn Chik'n Cutlets sautéed with onions and hot peppers- along with some spicy Mexican seasonings. 3 corn tortillas and fresh cilantro rounded out this meal. So good and tasty.

Beans: Trader Joes vegan refried beans
Rice: Trader Joe's brown rice- frozen bags
Quorn Chik'n Cutlets- the only part of this meal that was not vegan- some egg is used in the ingredients.

All in all, good lunch. Not raw, but fits the vegetarian bill and my desire to have something cooked. Lol. Oh well.
