Spectrum day 299- dinner: Homemade Carrot Soup Recipe

I made homemade carrot soup tonight.

I scoured the internet for carrot soup recipes and couldn't find one that included all the ingredients or methods that sounded good to me. I got an understanding of the process and create what I think is a very tasty soup. I actually got my friend who thought the sound of carrot soup was not attractive to say that he loved it. Score!!!!
Here it is....

Ingredients:
4 carrots
2 celery
2 apples
1 medium onion
6 garlic cloves
8 oz Sour cream
4 cups vegetable broth/stock
1 cup white wine
A dash Pumpkin pie spice (or cinnamon & nutmeg
Salt - to taste (optional)
Chives as a garnish

Peel and chop 4 carrots, 2 celery stalks and 2 peeled and cored apples into 1/4 inch pieces. Set aside.

In a large pot, sauté 1 medium onion, 6 garlic cloves in 2 tbs of butter. After the onions and garlic start to soften, add the carrots, celery and apples to the pan. Continue to sauté for 5 minutes.

Add the wine and vegetable broth. Simmer on low until the carrots are cooked and tender. Remove from heat. Blend using an immersion blender (or in batches using a blender or food processor). Once the soup is puréed, add the sour cream and blend/mix. Add a dash of the pumpkin pie spice (or a dash of cinnamon & nutmeg) and salt to taste (optional).

Serve while hot. Garnish with chives.

Yields 4 bowls of soup.
