Spectrum day 82- dinner
Last night I soaked limas, kidney and black-eyed peas. I cooked them in the crock pot on high all day with 2 packets of no sodium chicken broth powder. When I got home, I pureed garlic, green onions and a green pepper and added it to the soup. I let that cook on high for 2 hours. I boiled some thin rice noodles that I got at the Oceanic Market and put them in the soup. They added a texture and thickness to the soup. I also added 1 can of tomato paste to add some flavor. I made a decent size bowl for myself, topped with some shredded cheddar and poured some peri peri sauce right in the middle. Wow, was it good! I might have some more in a little while. I'll let you know...
