Spectrum day 56- lunch

I pulled out a veggie burger from the freezer that I had made and froze a while back and put it between two mini pitas with one piece of baby Swiss and one piece muenster. I microwaved the burger for a minute the put the sandwich together and put it on a pan with nonstick cooking spray. I used my cast iron pan as a a weight using a piece if tin foil to separate the cast iron from the sandwich. I cooked it in each side until the pita was a crispy brown and the cheese was melty. I had one haas avocado that I spayed with RWV and OVOO. I topped the avocado with freshly cracked pepper. I used some of the avocado as a condiment for my burger. I mashed some and spread it on the inside of the bun. It was wonderful!
