Spectrum day 22- dinner

Coconut stir-fry- I took my recently purchased fresh veggies and made a wonderful dinner. Here's what's inside:
Bok choy
Brussels Sprouts
Enoki Mushrooms
Garlic cloves- crushed
Green onions
Grape tomatoes- halved
Hot peppers
Shredded carrot
All ingredients sauteed in a very limited amount of toasted sesame oil, coconut oil & BLA. After the veggies were still al dente, I added half a can of coconut milk and a few tablespoons of "Hell on the red" salsa. Served on a bed of freshly made brown rice.
