Spectrum day 23- breakfast

Steel cut oats made with equal parts skim milk and water. No sugar or sweetners.

Beverage: cafe con leche made with skim milk, espresso, and 3 teaspoons xylitol.

Weigh in: 277 and holding. It's amazing how different you feel when you have lost 10% of your body weight. When I think about how much I have lost already it amazes me. Here's an analogy my friend mentioned to me the other day: For the dogs, I buy a 40 pound bag of food. It is so heavy and hard to carry. I imagine that I have lost almost a whole bag of Kibbles and Bits! What a great visual. Knowing almost that much weight has been lifted off me, makes everything worth it. Besides the motivation factor, I am being more mindful of my eating and adding new levels of diversity every day. I work, go to school full-time, homework, practicum requirements in an elementary school and am working on starting a business- oh yeah, and sleep! It does get hard sometimes to plan and cook with all the busyness, but the positive effect on my health and wellbeing outweigh the desire to eat quick, unhealthy food. I have more energy than I have had in years. It continually amazes me how much different I feel in just a few weeks. Onward to healthy living... My quest continues.
