Spectrum day 25- baking complete
I will put this on my recipe link after I have been rescued from this weekend's homework avalanche. I've been trying to dig myself out for a while!
Pumpkin Cheesecake Muffins
What's inside:
1/4 fresh pumpkin seeded and steamed
4 1/2 cups Whole wheat flour (instead of white flour)
2 frozen bananas (heated in the microwave until they are soft and mash-able. This is where the majority sweetness comes from)
1 single serving sized container of unsweetened applesauce (takes the place of the oil)
2 tbs Vanilla
2 tbs Cinnamon
6 tbs Egg whites
What's in the cream cheese filling:
1 package fat free cream cheese
ICBINB spray( just a few pumps)
1 tsp xylitol
A dash of brown sugar
What's in the streusel topping:
Whole wheat flour (instead of white flour)
3 tbs xylitol
1 frozen banana (heated in the microwave until it is mash-able. Again, this is the sugar replacement)
1 single serving container of unsweetened applesauce (instead of oil)
Some Chopped pecans. (I didn't measure them)
For the cookies, I just used the batter mix that was left over and added a bunch of chocolate chips.
Preheat oven to 375. Spray the pans with a butter pan spray like Pam or a grocery store equivalent. Bake the cookies for 20 minutes, the muffins will vary depending on the size of your pan. Test them when you take the cookies out. If they are done, cool. If not, add 10 minutes and check again. They will be ready when the knife comes out clean.
Fill the pan about halfway with the batter. Then put a layer of the cream cheese filling. Lastly, top off with the streusel.
