Spectrum day 14- healthy jelly recipe
As I mentioned in my last post, I had been wanting to sweeten up my morning toast, but not wanting to take in the undesired sugar or fake sweeteners. I decided to make a quick jelly that would be healthy, yet tasty. I took 3 of the strawberries that I had picked up at the fresh market, cut them up and place them in a small glass bowl. I sprayed a couple of pumps of "I can't believe it's not butter" spray and put it in the microwave for one minute. After the minute was up, the strawberries had already begun to break down. I cut them up even more in the bowl, and put them back in for one more minute. Once they were finished, I tasted to see if they were sufficiently sweet, but found they still needed a little help. I got a packet of Truvia, which is a natural Stevia sweetener. I added one packet, and decided that one more would do the trick. A wonderfully light, sweet jelly had just been created! It was an excellent addition to my whole wheat toast.
