Spectrum day 5- dinner prep

I decided to make a veggie burger for dinner tonight, so I scrounged through the refrigerator and pantry gather tasty & healthful ingredients. The picture shows all the ingredients that went into the mix. Spicy tofu crumbles, spinach leaves, cilantro, pomegranate seeds, dried apricot, sliced green apple egg whites and sodium free beef broth. I made little pattys but they seemed to not hold together, so I decided to make little tin foil pockets to bake them in. I have them baking at 400 degrees. Can't wait to see how they come out! They smell great...
